I was playing a solitaire game and Sheoldred flipped, and when the second ability triggered, i discarded the 3 card but not milled.

Can confirm, the second chapter of The True Scriptures on the backside of Sheoldred does not cause the mill 3 half of the ability to occur when it resolves.

Why not just delete the card from the client if it will never be fixed but lacks functionality?

Sheoldred Saga's second ability works as intended in Duel and Multiplayer matches.
Note that solitaire is a mode intended for users to test out most interactions in the game. But since the user is both the main player and the opponent in solitaire, this can make certain interactions seem incorrect or impossible.
