Confirmed Rebound + Invert Polarity

After casting an Invert Polarity on my opponent's Ephemerate, my opponent still got the rebound trigger to cast Ephemerate on their upkeep, which should not be the case since Rebound only works if the spell was cast from YOUR hand, so it should have gone to the graveyard on resolution

Sounds to me like your opponent did "Cast" the Ephemerate from his hand... you just gained control of it.
But since he "Cast" it, he would still get the Rebound trigger, the way the card reads. Or am I reading your logs wrong?

Rule 702.88a states "

"Rebound appears on some instants and sorceries. It represents a static ability that functions while the spell is on the stack and may create a delayed triggered ability. "Rebound" means "If this spell was cast from your hand, instead of putting it into your graveyard as it resolves, exile it and, at the beginning of your next upkeep, you may cast this card from exile without paying its mana cost."​

Since the spell was cast from my OPPONENT'S hand and not mine, the rebound trigger should not have happened, since the static ability refers to the controller of the spell, not the owner/original caster.
